there are less than two outs, because the sac fly would not be possible. Grounder to shortstop (or second base), playing normal depth, makes the play at first, runner scores, no sacrifice. Same result as the fly ball deemed a sacrifice.

I don't buy the logic that one can "decide" to hit a fly ball, or can control it. It just happens. If that's the case, every hitter should get a hit, because he decided to.

The bunt, one is giving themselves up. The fly ball is no different than a deep grounder to short or second. I could just as easily argue that they "decided" to do that, and it should also be a sacrifice.
